Acacia Honey, 100% Italian.

Acacia (Robinia pseudoacacia L.) is a shrubby or arboreal plant found throughout Italy. Among the various honeys, acacia honey is undoubtedly the most widely known and appreciated. Its success is based on its distinctive characteristics: pale color, liquid form, and light, delicate aroma and flavor. These qualities are unmatched in any other Italian honey and are highly prized by honey enthusiasts.

The main characteristic of this type of honey is its high fructose content, which is responsible for its low tendency to crystallize and its high sweetening power. From a compositional standpoint, it is also characterized by its low mineral salt, enzyme, and acidity content.

Organoleptic characteristics
Black locust honey is generally liquid;
It may occasionally appear cloudy due to the formation of crystals, but it never fully crystallizes. The color is always very light, ranging from almost colorless to straw-yellow.

On the nose, it offers a fine floral, slightly fruity aroma, reminiscent of paper and black locust flowers. The flavor is decidedly sweet, with a very light acidity. The aroma is very delicate, short-lived, and reminiscent of vanilla, sugar, and peeled sweet almonds, with no aftertaste.

To reduce the incidence of contamination by other blooms, it is essential for us to have a good knowledge of the territory and nectar resources, to be timely in placing and collecting the honey supers so as to isolate the nectar flow coming from the black locust tree, and to adequately monitor the hives and the work of the bees.
